Easy Buffalo Chicken Pizza

If you know me then you know I LOVE pizza. I always have ever since I was a little girl. I was quite a picky eater growing up but I could always eat lots and lots of pizza. I’m excited to share this easy Buffalo Chicken Pizza with you – perfect for a hot summer night with the family or friends.

Keeping it Simple

I like keeping everything simple, especially in summer when its so HOT. This recipe only has a few ingredients. I love using their ready prepped shredded rotisserie chicken and their buffalo sauce avocado oil. We also just got ready made pizza crust and took it out of the fridge to rest and relax, this takes about 2-4 hours.

I keep the rotisserie chicken and buffalo sauce in my fridge at all times. It’s great to top a salad with and a sales person at Trader Joe’s recommended putting the buffalo chicken on Hawaiian rolls for an easy dinner. We also did a cold noodle salad with the rotisserie chicken on top.

Gozney Pizza Oven

We love our Gozney Pizza Oven. It’s a high heat pizza oven developed in England and has a wonderful stand with wheels which means we can bring it over to the pool for pizza pool parties. I shared more about the Gozney during the winter. We got our Gozney at BirchBarn during their Maker’s Market and just got a BirchBarn pizza peel.

Easy Buffalo Chicken Pizza

You probably already have most things you need to make this delicious and tangy pizza. Here’s what you need:

  • Pizza Dough (homemade or store bought)
  • Rotisserie Chicken
  • Buffalo Sauce
  • Mozzerrella Cheese
  • Blue Cheese
  • Scallions
  • Blue Cheese Dressing (option)

The above photo is making the pizza and we assemble it right on the pizza peel. Special tip: put flour or corn meal on the board to get the pizza to slide off easier.

Then we place it in the Gozney for about 2 minutes and turn in between.

How easy is that???? It tastes so good too. The kind of meal where you can’t help saying “Mmmmmmm. Mmmmmm” between each bite.

We can’t wait to make this easy buffalo chicken pizza again and again. We loved it so much. Tangy and spicy but creamy too. It’s just so good! In addition to that pizza we also did a simple Margarita pizza with sauce, shredded mozzarella and Buffalo mozzarella cheese. I like to put chili flakes on mine.

Easy Buffalo Chicken Pizza

Tangy and creamy this crispy Buffalo Chicken Pizza is a must for any summer gathering.

Equipment

  • 1 Gozney Pizza Oven

Ingredients
  

  • 1 ball pizza dough store bought
  • 1 packed Shredded Rotisserie Chicken Trader Joe's
  • 1 bottle Buffalo Sauce with Avocado Oil Trader Joe's
  • 1 pack Shredded Mozzarella Cheese
  • 3 ounces Blue Cheese
  • 3 Scallions cut on diagonal
  • 3 Tablespoons Blue Cheese Dressing for drizzling
  • Flour or Cormeal

Instructions
 

  • Take store bought pizza dough out of the fridge for 2-4 hours to rest and relax
  • Fire up the Gozney Pizza Oven. Let it get to the desired temperature (usually takes 30 minutes to an hour).
  • Stretch out dough and place corn meal or flour on the pizza peel first.
  • Mix Rotisserie Chicken and Buffalo sauce in a bowl and spread across the pizza dough.
  • Scatter shredded mozzarella and chunks of blue cheese on top of the pizza.
  • Cook pizza in Gozney Pizza oven for approximately 2 minutes turning in between.
  • Top pizza with scallions and drizzle with blue cheese dressing. Serve immediately.
