Fresh Fruit and Ricotta Tartines

Lately we’ve been enjoying the most wonderful and easy breakfasts / brunches. We love fresh fruit and ricotta tartines. They are quick, delicious, and super easy to make!

Our first attempt was above! Ooooh, and it was so good. This is a tartine with ricotta cheese and fresh nectarines. I snapped this shot on my phone right before we devoured it. It’s important for me to share real life. To capture it as it’s happening.

What’s a Tartine?

I only discovered this dish a few years ago. Knead Bakery is the first place we had a tartine. A tartine is made on sourdough bread and it’s pretty much an open faced sandwich on toasted bread. You can use a fork and knife but I find it easier to just pick up with my hands like toast.

Feel free to top it with anything, but you can use our recipe as a loose guideline. It’s so fun to experiment.

What You’ll Need

You probably have everything you need at home already. But here’s what you’ll need:

  • Sourdough Bread. We got ours at Knead but Luke also has a wonderful sourdough bread recipe. He just got the starter going again.
  • Ricotta Cheese – a tangy Italian cheese often used in lasagna or ravioli. I love how light it is with a soft, sweet flavor
  • Fresh Fruit – whatever you like works!
  • Honey – our local honey is from Dalby Farm and I love their clover honey.
  • Micro Greens – these make it so pretty. We used arugala micro greens that gift a slight peppery taste.
  • Salt & Pepper
  • Olive Oil and Balsamic Vinegar to drizzle.

Some Tips for Making Tartines

The ricotta cheese has a very light soft flavor so I like to add some lemon zest and a bit of honey. I would taste test as you go with the amount of honey.

You can butter or oil your toast prior to spreading cheese but I don’t find it’s neccessary.

We couldn’t believe how tasty a few things on toast actually was. I think it’s the mixture of salty, sweet, tangy, and tart. These tartines are bursting with flavor and texture. I enjoy drizzling with a mixture of olive oil and balsamic and I’m partial to this drizzle olive oil. I mix the oil and balsamic in a little bowl and drizzle a little on top along with a little honey and some fresh ground pepper and Sea Salt Flakes. The salt brings out the sweetest of the fruit.

Fresh Fruit and Ricotta Tartines

Crusty sourdough toast in the foundation for this sweet and savory tartine with ricotta and fresh fruit.

Equipment

  • toaster

Ingredients
  

  • 2 slices sourdough bread toasted
  • ricotta cheese whole milk
  • honey local (if possible)
  • lemon zest
  • fresh sliced fruit nectarines, strawberries, or whatever you have on hand
  • olive oil extra virgin
  • vinegar balsamic
  • thyme leaves
  • microgreens we used arugula
  • Fresh ground pepper and salt flakes to taste

Instructions
 

  • Toast two slices of sourdough bread. While toasting, in a small bowl mix together ricotta cheese, honey, and lemon zest. This is to taste so go light with lemon zest and honey and add more if desired.
  • Cut toast in half and spread the ricotta mixture on top. Place sliced fruit on top of the ricotta cheese.
  • Place thyme leaves and micro greens on top of the fruit and drizzle with olive oil and balsamic vinegar and more honey. Sprinkle with salt flakes and fresh ground pepper (to taste).
  • Serve immediately and enjoy!
