Fresh Fruit and Ricotta Tartines

Crusty sourdough toast in the foundation for this sweet and savory tartine with ricotta and fresh fruit.

Ingredients
  

  • 2 slices sourdough bread toasted
  • ricotta cheese whole milk
  • honey local (if possible)
  • lemon zest
  • fresh sliced fruit nectarines, strawberries, or whatever you have on hand
  • olive oil extra virgin
  • vinegar balsamic
  • thyme leaves
  • microgreens we used arugula
  • Fresh ground pepper and salt flakes to taste

Instructions
 

  • Toast two slices of sourdough bread. While toasting, in a small bowl mix together ricotta cheese, honey, and lemon zest. This is to taste so go light with lemon zest and honey and add more if desired.
  • Cut toast in half and spread the ricotta mixture on top. Place sliced fruit on top of the ricotta cheese.
  • Place thyme leaves and micro greens on top of the fruit and drizzle with olive oil and balsamic vinegar and more honey. Sprinkle with salt flakes and fresh ground pepper (to taste).
  • Serve immediately and enjoy!
