Festive Gingerbread House Cakes

Festive gingerbread house cakes are fun to bake and also make a winter table look so pretty. Learn how to bake them to enjoy this Christmas!

My 11 year old, Conor, LOVES to cook and bake. You may remember that we baked pumpkin loaves last month. I found this adorable gingerbread house baking tin and knew gingerbread cakes were a must for December.

I don’t know about you, but I find constructing gingerbread houses such a pain! They cave in and break and there may be some swearing along with Christmas carols in our house!!! Sigh! Well, when I saw this adorable tin, I thought it was a no brainer. Easier gingerbread houses for me!

Conor and I baked three sets of these sweet houses for our Christmas Tour, click here, if you missed it. We used the cakes as a centerpiece on our pine table strewn with greenery.

They also look so crisp and classic with a white tablecloth. I’ll be sharing another tablescape idea with them next week but for now I wanted to share this easy recipe.

You probably have all the basic ingredients in your pantry: flour, sugar, dark brown sugar, eggs, baking soda, baking powder.

Of course, the spices are essential to create the lovely flavor of gingerbread: cinnamon, nutmeg, allspice, and ground cloves.

You will need baking spray, and I recommend one for baking like this. We made three batches and not one stuck!

I also would recommend dusting with powdered sugar. It looks like snow and is so simple and pretty.

The powdered sugar picked up the fine details of each cake.

Below is the recipe card with Martha Stewart’s recipe! I hope you enjoy them. I think they’ll look so pretty in your homes. You can also decorate with frosting and candy. Conor had so much fun decorating them after I took photos for the home tour.

Equipment

  • Ginger Bread Double Cake Pan by Nordic Ware

Ingredients
  

  • non stick baking spray Pam with Flour
  • 1 cup unsalted butter room temperature
  • 1 ¼ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon ground ginger
  • ¾ teaspoon grated nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup dark brown sugar packed
  • ½ cup granulated sugar
  • 4 eggs large
  • 1 teaspoon vanilla extract
  • confectioners' sugar for dusting

Instructions
 

  • Preheat oven to 350°F. Spray the Gingerbread House Double Cake Pan with baking spray. Sift together flour, salt, baking soda, baking powder, cinnamon, ginger, nutmeg, and cloves in a large bowl.
  • With an electric mixer on medium speed, beat butter, brown sugar, and granulated sugar until pale and fluffy, 2-3 minutes. Add eggs, 1 at a time, mixing well after each addition. Beat in vanilla. Reduce speed to low; gradually add flour mixture and beat until just incorporated.
  • Transfer batter to prepared pan. Fill each well no more than ¾ full to avoid overflow. Gently tap pan on counter to remove any air bubbles. Bake until cake tester comes out clean, 45-50 minutes. Let cake cook in pan for 10 minutes. Transfer to a wire rack to cool completely.

Notes

Dust with sugar once cooled. The cake may also be decorated with icing and candy if desired.
Clean pans promptly and make sure not to soak pans overnight. It can damage the coating on the pan.
