Elevating Your Avocado Toast
I believe Avocado Toast is going to have a comeback and I’m all for it! I LOVE avocado toast, in fact, I ate it most mornings in some variation while we were traveling. I couldn’t wait to get home and put some of these ideas into action. Get ready for elevating your avocado toast!

Five Ways to Elevate Your Avocado Toast
Add Peas

I know it may sound a bit weird but I had an avocado toast with peas in Bristol, England it was so delicious. The slightly mashed peas offered a lovely texture and sweetness mixed in with the avocado not to mention it helps your avocado go a bit further.
I simply used some frozen peas and I microwaved them in 20 second increments until they were cooked and then I let them cool slightly and mashed them with the avocado.

Homemade Sourdough
Yes, the bread really makes a difference. During Covid Luke was making amazing sourdough. If you’d like recipe you can get that here, but we have a bakery so close to our home and Knead makes phenomenal sourdough.

Herbal Essence
I LOVE herbs and I enjoy using them in my cooking and baking. I have a little cutting garden filled with all kinds of herbs. I find it best to have this right outside our back door on the patio, for ease of access. I just planted mint:

The Spearmint is from Doverflower Cottage’s plant sale.
I just planted this Krausa Parsley that I got at the Scituate Garden Club Plant Sale over the weekend. It is a curly parsley but sweeter. I love how cute it is!

You can add any herbs you fancy or have access to you.
Pretty Flowers
Adding edible flowers makes everything prettier and a bit more special.
I love using pretty violas (I have them on patio table):

Chive blossoms are fun too:

Just make sure to swirl the heads in water to remove any little bugs. I love using the other part to give a light onion scent to the avocado toast.

Bring the Heat
Adding a little heat makes this avocado toast more special. I sprinkled with crush chili flakes and also drizzled with chili oil. This is my new favorite oil infused with jalapeño. I got the drizzling pizza oil at Acquire Good (if you’re local) otherwise I’ve included a link above.

We LOVE breakfast together EVERY morning but Sundays are our slower day. This feels special to take some time to pick some flowers, mix up some avocado, and read the paper.

Add Pea Shoots
Adding pea shoots give a light pea flavor to your eggs. These scrambled eggs had extra cheese in them.

Zesty Scallions and Lime
This oversized avocado toast cut scallions, or green onions, lengthwise over a giant helping of avocado with zesty lime.

Roasted Tomatoes and Mozzerella Cheese
This breakfast was phenomenal. This is the one that inspired our version. They mixed peas into the avocado but also used roasted tomatoes, creamy mozzarella cheese shredded, chili oil, and crushed hazelnuts on top the poached egg. You will also notice that they used the pea tendrils.

Lots of herbs
This version used lots and lots of dill, mint, and chives along with chili oil. I mentioned this meal the other day in my post – a guide to London.

Elevated Avocado Toast
Equipment
- 1 toaster
Ingredients
- 2 slices Sourdough Bread fresh baked if possible
- 1 Avocado
- ¼ Cup Frozen peas
- Handful fresh herbs chives, mint, parsley
- ½ Lemon or Lime
- drizzle pizza oil with jalapeño
- 2 pats butter
- salt and pepper to taste
- handful edible flowers violas, chives
- crushed pepper flakes optional
Instructions
- Toast sourdough bread.
- While bread is toasting, chop avocado, add juice of half lemon or lime, salt and pepper to taste into a medium size mixing bowl.
- Heat peas and allow them to cool to slightly and then mash into the avocado. Leave some peas whole.
- Slice toasted sourdough on diagonal and butter liberally. Add the avocado mixture on top of bread.
- Scatter edible flowers and fresh herbs on top of toast.
- Drizzle with jalapeño pizza oil and crushed red pepper chili flakes (if using).
- Serve immediately and enjoy with a cup of tea or coffee and the Sunday paper.
