Fit Fridays: Salmon Teriyaki

Hooray it’s Friday! A snow day here in Scituate!  I have a super yummy recipe for you today. Salmon Teriyaki!  We had this for dinner last night during the storm and it was so quick and easy to pull together.

We eat a lot of salmon in our house and it is a wonderful filling fish packed with omega 3.  I make my own home-made teriyaki sauce which is lower in sodium than the store bought kind.  Here’s what you need:

Salmon Teriyaki
 
– Salmon Fillets
– 2 tablespoons Mirin (sweetened sake)
– 2 tablespoons Low Sodium Soy Sauce
– 1 tablespoon sugar
– sesame oil
– black sesame seeds (optional)
 
For the sauce, heat the mirin, low sodium soy sauce and sugar in a small sauce pan over low to medium heat.  Continue stirring until the sugar is dissolved.  Heat a small amount of sesame oil in a pan and place fillets in.  While cooking salmon brush on the glaze.  Cook for approximately 5 minutes or until cooked on each side.
Top with sesame seeds and serve with brown rice and steamed pea pods.
I like to drizzle a little low sodium soy sauce over the brown rice and pea pods and sprinkle more sesame seeds.
 
This is a HUGE hit in my house.  All of my boys LOVE this one.  I also have a little girl who loves it too:

She ate a lot of salmon and brown rice last night.  I mean how could I resist that face and those pleeding eyes?

THE RECIPE FOR SALMON TERIYAKI SOUNDS DIVINE. However, I could never resist that sweet face of Poppy’s-she is divine in a more wonderful way!

Oh, I’m so glad! Yes, Poppy, is pretty hard to resist 🙂
