Equipment

  • Oven
  • Mixing Bowls
  • Muffin Tin and muffin liners

Ingredients

  • 4 bananas very ripe
  • 1 ½ cups flour All Purpose
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¾ cups sugar granulated
  • 2 tablespoons vanilla
  • 1 egg
  • cup butter softened unsalted
  • 5 wedges Terry's Chocolate Orange chopped in chunks

Instructions

  • Preheat oven to 375°F and line your baking trays with muffin liners.
  • Melt butter. I do this in microwave to save time.
  • In a bowl combine flour, baking soda, baking powder, salt and cinnamon.
  • In a bowl or mixer mash the ripe bananas and add sugar, egg, butter, and vanilla and combine.
  • Slowly mix in flour mixture into the banana mixture until just moist.
  • Add the chopped up chocolate orange and mix in.
  • Spoon into muffin liners and bake for 25 minutes or until golden on top. I always double check the muffins are cooked by using a toothpick.
  • Allow to cool on wire rack for a few minutes before serving!

Notes

You can also make this as a loaf instead of muffins by pouring mixture into greased loaf pan.
Variations - instead of chocolate orange add - chocolate chips or peanut chips. Nuts are also a lovely addition.
