Easy Lobster Salad Appetizer

A fun a light twist on lobster salad - perfect for summer or holiday entertaining

Ingredients
  

  • 1/2 pound cooked lobster meat
  • 2 tablespoons mayo Hellman's
  • 1 tablespoon lemon juice
  • 1 scallion chopped
  • 8 endive leaves
  • 1 celery rib finely chopped
  • salt and pepper to taste

Instructions
 

  • Prep cooked lobster meat - rinse in colander and chop into smaller pieces
  • Mix - in a mixing bowl combine lobster, mayo, lemon juice, scallion, celery - carefully folding the mixture
  • Add salt and pepper to taste
  • Wash endive leaves
  • Place lobster salad on endive leaves
  • Serve immediately with lemon wedges on the side

Notes

This is lovely during the summer as a fun appetizer or lunch.
Also wonderful for winter gathering served with champagne.
