Easy Lobster Salad Appetizer

Ingredients
1/2
pound
cooked lobster meat

tablespoons
mayo
Hellman's
1
tablespoon
lemon
juice
1
scallion
chopped
8
endive leaves
1
celery rib
finely chopped
salt and pepper
to taste
Instructions
Prep cooked lobster meat - rinse in colander and chop into smaller pieces
Mix - in a mixing bowl combine lobster, mayo, lemon juice, scallion, celery - carefully folding the mixture
Add salt and pepper to taste
Wash endive leaves
Place lobster salad on endive leaves
Serve immediately with lemon wedges on the side
Notes
This is lovely during the summer as a fun appetizer or lunch.
Also wonderful for winter gathering served with champagne.
