Homemade Potato Salad

Homemade potato salad that's a bowl full of comfort. Pairs well with burgers or sandwiches for a picnic.

- 1 pound Red Bliss Potato Home grown tastes even better
- 1 cup mayonnaise Hellman's
- t teaspoon corn oil or vegetable oil
- 1 tablespoon apple cider vinegar
- 1 shallot chopped
- Salt and Pepper to taste
Wash and peel potatoes
Bring pot of water to a boil and salt water Boil for 20 minutes and drain once cooked.
Allow potatoes to cool.
Chop shallot
Mix mayonnaise, corn or vegetable oil, apple cider vinegar and add chopped shallots. Season with salt and pepper to taste.
Quarter the cooled potatoes
Fold potatoes into mayonnaise mixture
Chill until ready to serve
Serve chilled with chopped herbs on top.
Home grown potatoes and shallots taste so good. If you have room in your yard plant and crop in the spring and enjoy in late summer.
Potatoes cool quicker if placed on a plate to cool.
