Fit Fridays: Salad Greens with Blue Cheese, Walnuts & Cranberries

Happy Friday!  I don’t know about you but this week flew by for me!  We’re now on week 4 of our healthy eating / living challenge and I’m out of my slump.  I’ve been eating healthy (with the occaisional chocolate or glass of wine), but best of all I’ve been getting to yoga, pilates and balance barre.  I feel so great and have so much more energy.  I’ve also been less stressed.  It is so true what they say about just carving a bit of time out for yourself.  I’m sure my hubby and the kids would agree!

This week I have a really fantastic and easy recipe that my friend, MaryAnn, shared with me.  It is so easy and packed with greens and flavor:



Salad Greens with Blue Cheese, Walnuts, and Cranberries

Recipe By: Boston Globe
Serving Size: 8

Ingredients:

Dressing
1/4 cup sweetened rice vinegar
1 teaspoon orange liqueur
1/2 teaspoon lemon juice
salt and pepper to taste
1 tbl olive oil

Salad
1/2 cup chopped walnuts
1/2 head read leaf lettuce
1 romaine
1 head frisee
5 ounces mixed baby greens
1/2 cup dried cranberries
salt and pepper to taste
1/2 cup blue cheese

Directions:
Toast walnuts.   Toss greens with dressing.  Add 1/2 cup crumbled blue cheese & serve!

It is that easy and I have to say the mix of tangy blue cheese, sweet cranberries and the toasted nuts is out of this world.  The hint of orange liquor also adds a little decadent twist to this simple salad.  I found it so satisfying and effortless to make.  Hope you enjoy it!

Yum! Just found this on Pinterest. It looks delicious! I love candied pecans with blue cheese so I’m sure this combination will be delish too!! 🙂
