Crumble

Rhubarb, Raspberry & Apple Crumble

Is there anything more comforting than crumble?  Well, you’re right perhaps, crumble with ice cream would elevate the comfort level.  This is one of my favorites and you can do it with whatever fruits you have.

We picked some raspberries and rhubarb from the garden just before Hurricane Sandy and we rushed to make this crumble before we lost power from the storm.

Here’s our fresh picked rhubarb from the garden:

But you don’t need rhubarb for this if you don’t have it.  You could use frozen berries or apples.  You can use whatever you have in the house.  I’m so happy to share with you Nanny’s crumble recipe.  I shared it with you last year for apples when we went apple picking.

Cut rhubarb and apple into 1″ pieces.  Place rhubarb, apples and raspberries into an ovenproof dish, sprinkle with sugar to taste.  Conor helped cut up the fruit.

Rub 2/3 of a cup of butter into 2 cups of flour. When the mixture is like breadcrumbs mix in 2/3 of a cup of sugar.  Little hands love helping with this part:

Mixing the butter and flour together

Sprinkle the mixture over the rhubarb and put into a preheated oven 200c [400f] for about 35min until golden brown.  Enjoy!  When you make it be sure to have ice cream – it is even better a la mode!

Hope you all have a lovely weekend! I’m going to try very hard to finish the bathroom and we have some more fall clean up to do!
