Skinny Dip(ping) with Cucumber and Mint

When I think of summer, I think of the lovely taste of mint growing on our back deck, refreshing crisp cucumbers and tangy limes.  That is why I was so excited to get this amazing and very refreshing recipe from Sweet Georgia P’s – Cucumber Salad with Yogurt and Mint.  I talked about Sweet Georgia P’s before.  It is a lovely organic CSA based right here in Scituate.  We love Rebecca, Joe and their daughter Georgia and have got to know them quite well.  We are such fans of the farm and their very delicious eggs.  This week was our second week of the CSA for 2012 and we got everything we needed to make this yummy recipe.  Hope they don’t mind I’m sharing it with all of you!

Sweet Georgia P’s Cucumber Salad with Yogurt and Mint

ingredients:
2  cucumbers, peeled in strips, seeded and diced   
1 bunch of scallions, cleaned and thinly sliced
2  limes, juiced
4 sprigs fresh mint, picked and coarsely chopped
1 Tb honey or agave
⅔ C greek yogurt
to taste kosher salt and freshly ground black pepper

Method:
Half peel the cucumbers in stripes, leaving half the skin on for color and texture.  Split the cukes in half lengthwise, scoop out seeds and cut into a medium dice.  In a large mixing bowl, combine diced cucumbers with sliced scallions, lime juice, fresh mint and a drizzle of honey (or agave if available).  Season well with salt and pepper.  Mix in greek yogurt and allow to sit, refrigerated for 1-2 hours.

I know you will love it!  It really reminds me of the cucumber salad they serve at Indian restaurants in England.  Such a nice mix with popadums.  Conor absolutely loved it.  Here he is dipping some chips in:

Last night we had it with turkey kielbasa, fresh veggies and chips.  I’ve also heard this dip is nice with burgers or grilled fish!  So much fun to dip into this refreshing salad!  Also, a great way to get the kids to eat their veggies 🙂

I am doing the Sweet Georgia P’s CSA as well and tried this recipe at my pick-up last Saturday. It was really good and I have been meaning to make it! Your son is really cute. My son is really into dipping lately so this will be a good one for him.

This sounds delicious! I’ve had that Indian restaurant in England cucumber salad, and loved it, so I’ll have to give your recipe a go.

Just like cucumber raita – yum. I definitely aught to make some because I have some mint growing in a pot and nothing else to use it for !
