20 Minute Jambalaya

Quick & Easy Jambalaya 

If you’re a regular follower, then you know I only make easy peasy recipes.  I tried this for the first time the other night (we had dinner infront of the TV watching Happy Feet 2) and it was just so delicious.  Great easy meal for those warm summer nights:

20 Minute Jambalaya

1 c. instant rice
1 lb. Hillshire Farm smoked sausage or Polska Kielbasa, cut into 1 in. pieces
2 1/2 breasts of chicken in large pieces
1 med. onion, chopped
1 red pepper, chopped
1/2 c. sliced celery
8 oz of chopped tomatoes (canned or fresh, if using fresh throw in a little tomato sauce too)
4 drops hot pepper sauce ( I LOVE Frank’s)
1/4 tsp. pepper
EVOO

Cook rice according to package directions. While rice is cooking, heat EVOO in a large skillet.  Heat skillet over medium heat and brown chicken pieces.  Once chicken is browned, add sausage, onion, green pepper, and celery. Sautee until vegetables are tender. Add tomatoes, hot pepper sauce, and pepper. Drain cooked rice and stir into sausage mixture. Cook over low heat, stirring frequently until thoroughly heated. Makes 4 to 6 servings.

I really appreciate easy recipes like this one. I have some leftover celery from a recipe I made last week and most of the other ingredients so perhaps this will be dinner tonight! Thanks 🙂

We had it for dinner last night (subbed turkey sausage) and it was really great. Since there’s only two of us, we have lunch for today as well 🙂

Danielle, I’m so glad you tried it. I use turkey kielbasa usually. So glad you got two meals out of it!
