Hope you all had a Happy Pancake Day! Yes, I know yesterday was Fat Tuesday here in the States, but in the UK Shrove Tuesday is known as Pancake Day! I still remember my first pancake day in Britstol 12 years ago. These light crepe like pancakes with a dusting of sugar and zing of lemon. Last night we had the most delicious pancakes made by my husband and Conor. Yum.
We used a recipe from one of our good friends in England. If you are yearning for the most perfectly, thin and scrummy pancakes then you have to try Liz’s Awesome pancakes! They remind me of crepes:
Liz’s Awesome Pancakes Recipe…
Ingredients:
3 Eggs
225ml Milk
250ml Water
1 3/4 C Plain Flour
Pinch of Salt
Method:
Beat the eggs in a bowl.
Gradually whisk in the other ingredients (sifting the flour into the bowl…)
Do a final juj juj.
Leave to stand for 3 hours or more.
Cook & Enjoy… !!
(Makes c.12 pancakes)
The recipe calls for letting the batter stand so we made it in the afternoon and then enjoyed the pancakes in the evening. Luke flipped away:
While we all enjoyed them with lemon and sugar.
We also enjoyed them with Nutella (for dessert). You know how much we love Nutella in our house.

The pancake looks great – I haven’t made any because I keep forgetting to buy lemon – you just HAVE to HAVE sugar and lemon !
